Buffalo Chicken Pinwheels

Jump to recipe

Football is officially back! I love football season and couldn’t be more thrilled. And with football season comes lots of tasty snacks, apps, and game day grub like these quick and easy to prepare Buffalo Chicken Pinwheels.

As I explained in my post for Mozzarella-Stuffed Buffalo Chicken Meatballs, I am a sucker for anything buffalo chicken. These Buffalo Chicken Pinwheels feature the creamy and spicy components of buffalo chicken dip, rolled up in a tortilla.

I needed a quick and healthy recipe to take to our fantasy football draft on Wednesday.  Craig and I are in the same league & our friend/league commish owns a bar where he graciously hosts and provides an open bar during the draft. So I always try to bring some snacks for everyone to munch on and hopefully soak up some of the free beer.  I threw these buffalo chicken pinwheels together in about 5 minutes, let them chill in the fridge for an hour, and then sliced them into pinwheels right before serving.

The Method

Add softened Neufchatel or light cream cheese, Frank’s Red Hot sauce, nonfat Greek yogurt and ranch seasoning to a medium-sized bowl. Mix well.

Evenly distribute mixture onto 4 tortillas. It’s about 2-3 tablespoons of mixture per tortillas. Spread the mixture out to the edges of the tortilla. Roll tortillas tightly, wrap in tin foil, and refrigerate for at least an hour.

Slice each tortilla roll into 8 pieces. They sort of look like pieces of a sushi roll. Makes 24 total. Sprinkle with fresh chives and serve.
